Goya is the Okinawan and Japanese bitter melon: often paler, smoother warts, the goya champuru stir-fry vegetable. Bitterness is still the point, a little less ferocious than some karela. Slice thin and fry with tofu and egg. Karela recipes will work but the shape and bitterness differ.
