Paper birch syrup is boiled Betula papyrifera sap, the classic North American birch syrup: dark, mineral, with a soy-caramel note and far less sucrose than maple, so it never tastes like pancake maple. Yield is tiny. A few drops finish venison or roasted carrots. It is a finishing luxury, not a stack pour. Burnt birch syrup is acrid—good makers stop short.
