Dark Birch Syrup

Dark birch syrup is taken further in the evaporator: almost black, more bitter-mineral, useful when you want the soy-like note to stand up in a barbecue glaze or a rye dessert. It can tip into burnt if the maker was greedy. A half-teaspoon seasons a pot. Light birch (rare) is for people who want the mineral without the dark. This grade is the usual commercial colour.
