Alaska birch syrup is paper-birch (and sometimes Alaska birch) sap boiled in a short, intense season: the best-known commercial origin, often darker and more savoury than experimental European birch syrups. Production is tiny and expensive. Use it as you would a drop of aged soy in a sweet-savoury glaze. Buying Alaskan is a place claim, not a different chemistry from other paper-birch syrups—but the craft standard was set there.
