Centre-cut striploin is the most uniform part of the strip loin—source of classic New York strip/sirloin steaks with a fine grain, good marbling on higher grades, and a strip of exterior fat. It is a steakhouse benchmark: tender enough, more flavour than fillet. Grill or pan-sear, render the fat edge, rest, serve. Thickness of 3–4 cm suits reverse sear. Salt ahead when time allows. A reliable premium everyday steak.
