Malt Extract Syrup

Malt extract syrup is the brewer's and baker's concentrated wort: often lighter or more standardised than a rustic barley-malt tin, sold by colour (extra light to dark). Flavour is still malt; enzyme activity depends on whether it was kilned after extraction. Use extra-light in pale doughs, dark in rye. Homebrew tins are this leaf. It can be stickier and cleaner-tasting than old-style malt syrup.
