Zereshk

Fruit

Zereshk

S tier

Zereshk is the Iranian dried barberry of jeweled rice: tiny, sour, fried briefly in butter until it shines. It is a kitchen identity more than a botanical lecture. A tahdig rice garnish. Dried red barberry in a European jar may be close; the Iranian name is the pilaf leaf.
