Cider Syrup

Cider syrup is boiled hard cider or cider must: the alcohol mostly gone, apple and a faint ferment tang left, darker and more savoury than juice syrup. Normandy and west-country cooks use it like a gastrique base. A spoon in a pork jus is the point. It is not unfermented apple syrup and not vinegar. Reduce gently at the end or it turns bitter.
