Tail
Fillet tail section is the thin rear third of the albacore fillet. It cooks fast and is ideal for flaking into salads, pasta, and croquettes rather than thick rare steaks. Pound lightly for even cutlets if pan-frying, or poach and flake. Save loins for steak service; use tail for volume dishes. Freeze for later tuna salad if not using fresh.
