Raw Agave Syrup

Raw agave is marketed as lower-heat filtered sap hydrolysate, often darker and more vegetal than light agave. True low-temperature processing is the claim; flavour should be more agave-plant than candy. Some "raw" bottles are only slightly less refined. Use it if you want a less industrial taste. It can crystallise a little and will not be water-white. It is still a processed syrup, not chewed piña.
