Light agave is the pale, highly refined pour: almost neutral, thin, sweeter than honey cup for cup because of fructose. It disappears in iced tea and in a vegan lime dressing. It will not give you maple or honey character. Use it when you want liquid sweetness without flavour. Darker agave has more caramel. "Raw" claims on a water-white syrup deserve a raised eyebrow.
