Amber Agave Syrup

Amber agave is less stripped than the light grade: gold, a little caramel, still pourable and still mostly fructose-sweet. It is the better cooking agave when you want a hint of cooked sap without going to a dark, almost molasses bottle. It glazes roast squash and sweetens a margarita mix more interestingly than light. It is not maple. Heat will darken it further.
