Pattypan (scallop) squash is a flying-saucer shaped summer pepo with scalloped edges—pale green, yellow, or white—harvested small for tender flesh and edible skin. Flavour is mild and slightly denser than watery long zucchini. The shape stuffs well and looks festive on platters. Steam or roast whole mini pattypans; stuff larger ones. Overgrown fruits get tough shoulders. Often sold beside zucchini as summer squash variety rather than long green fruit.
