Volga zander (Sander volgensis), also called the Volga pike-perch, is a smaller relative of common zander native to the Caspian basin and connected rivers. Flesh is firm and mild, used in Russian and regional cookery much like standard zander when available. Pan-fry fillets or use in fish soups and aspic traditions. It is less common in Western wholesale; most “zander” abroad is Sander lucioperca. Still a distinct species for catalog accuracy and Caspian fishery context.
