Sander lucioperca is zander (pike-perch)—a European freshwater predator with firm, fine white flesh between perch sweetness and pike leanness, fewer terrifying Y-bones than pike, and high restaurant esteem. Fillets flake cleanly and take butter, wine, and herb sauces elegantly. Pan-sear skin-on, roast thick fillets, or poach for classic continental plates. Do not overcook. Wild zander from clean lakes is superb; farmed zander is expanding for steady supply. A true premium pan fish of Central and Eastern Europe.
