Pike-perch is the English trade name for zander, emphasising its perch-like eating quality with a pike’s predatory niche. Chefs buy it for reliable white fillets that hold shape on the plate and taste clean rather than muddy when sourced well. Serve with beurre blanc, girolles, or simple lemon. Compared with true perch it is larger-portioned; compared with pike it is easier to fillet. “Pike-perch” on a menu should mean Sander lucioperca, not a mix of unrelated fish.
