Hana yuzu (“flower yuzu”) is a small, highly fragrant Japanese citrus related to the yuzu complex, used more for aromatic zest and ornamental-culinary perfume than bulk juice. Flowers and small fruits contribute delicate scent. Specialty Japanese markets and gardens know it better than Western grocery aisles. Microplane zest into clear soups and confections.
