Goat Strained Yoghurt

Goat strained yoghurt is goat milk yoghurt hung or centrifuged to remove whey until spreadable-thick—between Greek goat yoghurt marketing and labneh-like softness. Salt optional; herbs welcome. Spread on flatbread, use as a chèvre-adjacent fresh dairy, or thin for dressings. Higher concentration means stronger goat flavour per spoonful. Store cold; surface may dry—press film on the yoghurt.
