Seriola quinqueradiata is Japanese amberjack—the classic yellowtail (hamachi/buri) of sushi bars, with rich, buttery flesh, fine grain, and high oil in farmed young fish. Wild adult buri is deeper and more savoury. It is the defining Seriola for East Asian raw and seared cookery. Serve as sashimi and nigiri when raw-safe, sear lightly, or grill collars (kama). Farmed hamachi’s fat needs little adornment beyond soy and wasabi. Keep very cold; the rich flesh dulls if mishandled.
