Fernor
B tier
Fernor is a modern French English walnut cultivar bred for orchard performance while keeping table-quality kernels in the classic sweet-bitter J. regia style. Growers like its commercial balance; cooks meet it as named French stock for snacking, baking, and oil. Fresh Fernor should smell clean and nutty, with a pleasant tannin edge from the pellicle rather than oxidised bitterness. Freeze surplus, toast lightly for salads, and reserve the best halves for garnish. Major tree-nut allergen handling applies. Compared with Franquette it is a newer breeding line, often planted where growers want updated agronomy without abandoning French walnut identity. Sample before large paste batches—named French origin still needs a fresh jar date.
