Brushed Whole

Brushed whole truffle is the fruit after careful dry cleaning—soil removed with a soft brush so the specimen is kitchen-ready without a water wash. Many premium sellers brush before weighing and packing so buyers are not paying for dirt. A well-brushed whole still looks natural, not polished raw; grit should be gone from folds. Over-washing is the enemy. Once brushed, keep cold and dry and use soon—the cleaning step is mise en place, not a preservation method.
