Paste
Truffle paste is finely ground truffle (sometimes with mushroom fillers, oil, or salt) sold in tubes or jars for quick aroma in sauces and doughs. The best pastes list a high percentage of named Tuber species; the worst are mostly porcini and flavouring. Stir a small amount into butter, mayonnaise, or a finished risotto off the heat. Good paste smells deep and fungal; bad paste is muddy or purely synthetic. It will not replace a fresh Alba shaving, but it can season weekday eggs honestly if the label is truthful. Keep sealed and cold after opening.
