Oil Infusion

Truffle oil infusion is oil (usually olive or a neutral base) flavoured with truffle or, too often, synthetic aroma compounds that mimic white or black truffle. Honest oils steep real pieces; many commercial bottles rely on bis(methylthio)methane and related chemicals for a loud, one-note smell. Use sparingly as a finishing drizzle—never as proof of a “truffle menu.” Good oil smells complex and fungal; bad oil smells like garlic perfume and does not fade. Real fresh truffle will always outclass oil. Store cool and dark; buy small bottles.
