Large volumes and low prices put black-truffle appearance on mid-market menus, but the volatile profile rarely matches French or Spanish winter black. Quality ranges from clean and mild to dull or off; buy with a nose, not only eyes. Best uses are where truffle is a background earthiness—dumpling fillings, mixed mushroom sautés, or infused butters that will not be judged against Alba. Avoid representing it as Périgord. Freeze-dried and powdered forms are common pantry shortcuts.
