Burgundy truffle is the regional and market name for high-quality autumn Tuber uncinatum associated with eastern France and neighbouring European woods. Expect a black warted skin, chocolate-brown marbled flesh, and a scent of hazelnut, spice, and light garlic that outpaces summer truffle. It is the thoughtful cook’s black truffle when winter Périgord is out of reach or over budget. Serve raw over buttered noodles, baked eggs, or warm lentil salads. Burgundy truffle also dries and powders more usefully than white truffle for pantry seasoning. Label honesty matters: Burgundy should not be a rebranded Chinese black.
