Fish
Galeorhinus galeus
A tier
Galeorhinus galeus is tope (school shark)—a houndshark with firm, slightly sweet meat used in Australian fish and chips as flake and in European coastal cookery. Properly bled flesh is mild and dense; liver was once prized for vitamin oil. Batter and fry, grill steaks, or stew. Conservation status is poor in parts of its range—many stocks are overfished. Prefer alternatives unless a local fishery is verified recovering. Classic chip-shop flake when legal and labelled honestly.
