San Marzano is the elongated Italian paste tomato famed for thick flesh, few seeds, easy peel, and a sweet-balanced flavour that defines premium canned tomatoes and Neapolitan pizza sauce. True PDO fruit from the Agro Sarnese-Nocerino under Vesuvius is the reference; seed-line San Marzanos grown elsewhere aim at the same shape and cooking quality with variable results. Fresh San Marzanos are excellent roasted; canned peeled fillets are the global workhorse. Prefer them for passata, ragù bases, and pizza where clean tomato sweetness matters more than raw salad perfume. Drain excess packing juice if a thick sauce is the goal. Look for protected origin marks when the name is the selling point.
