Ailsa Craig is a Scottish-bred medium tomato with a reputation for fine flavour under cool British summers—smooth red fruits, thin skin, and a sweet-tang profile prized by gardeners who struggle with heat-loving heirlooms. Named after the island rock in the Firth of Clyde, it became a UK greenhouse favourite for quality over sheer industrial firmness. Eat raw in salads and sandwiches when fully ripe; the thin skin and juice shine without heavy cooking. Also excellent lightly grilled. Seek seed-grown fruit or good market garden stock—flavour is why the name persists.
