Mozambique tilapia (Oreochromis mossambicus) was an early global aquaculture and feral species—hardy, omnivorous, and variable in table quality. Flesh is mild when farmed cleanly but can taste earthy from poor ponds or wild brackish waters. Smaller fish fry well whole; larger ones yield thin fillets. In many markets it has been displaced by improved Nile tilapia strains, yet it still appears in local Asian, African, and Pacific fisheries. Purge and cook with assertive aromatics if the fish is strongly flavoured.
