Caraway thyme (Thymus herba-barona) smells distinctly of caraway seed layered on thyme—low creeping mats with a perfume that suits roast pork, cabbage, potatoes, and rye-adjacent breads. Use sparingly; the caraway note is assertive. Excellent where you’d otherwise add both thyme and caraway. Not the right thyme for classic French stock.
