Glycine max
A tier
Glycine max is the soybean—protein- and oil-rich seeds transformed into tofu, miso, soy sauce, oil, milk, and edamame. Dry yellow beans are neutral and beany; fermentation and coagulation create cuisine. One of the world’s great utilitary legumes. Rarely eaten as plain boiled dry beans in the West; process into tofu or cook as edamame when green. Species underpins an entire product universe. Cook dry soy thoroughly if using whole.
