Black soybeans have dark seed coats used in East Asian stews, Korean black bean preparations, Japanese kuromame, and some health-food products. Flavour is richer and slightly sweeter than yellow soy when simmered with sugar or soy sauce. Simmer for kuromame-style sweets or savoury braises; use fermented black bean products carefully (often different ingredients). Whole black soy takes long cooking. A traditional celebration and everyday bean in parts of East Asia.
