Katsuwonus pelamis is skipjack tuna—the small, striped tropical tuna behind most canned light tuna and Japanese katsuobushi (dried, smoked, fermented blocks for dashi). Fresh flesh is darkish pink, firm, and strongly flavoured with moderate-high oil; it is more assertive than albacore. Global purse-seine fisheries land enormous volumes. Grill fresh steaks, searing rare if quality allows, or rely on canned and katsuobushi forms. Skipjack’s bold taste stands up to soy, ginger, and tomato. Fresh fish needs rapid chilling; it spoils and histamines faster than many whitefish.
