Blonde ray (Raja brachyura) is a sandy-coloured European ray commonly sold as skate wings—sweet, ridged muscle that poaches and pan-fries beautifully with brown butter and capers. One of the better-managed alternatives to true common skate when fisheries are local and assessed. Poach in court-bouillon or fry wing pieces after skinning. The flesh pulls in long strands from the cartilage. A proper fishmonger skate wing for classic European plates.
