French gray shallots (griselle) have greyish skins, pinkish flesh, and a reputation as the finest true shallot flavour—often botanically closer to Allium oschaninii than common yellow shallots. Harder to grow and store; prized by chefs. Taste is aromatic, sweet, and complex. Use where shallot is the star of a sauce or raw mince. Limited supply commands premium prices. Not the bulk Dutch yellow type.
