Ammodytes tobianus, the lesser sandeel, is a key North-East Atlantic sand lance—slim, green-backed, and abundant in clean sand banks when stocks are healthy. Human food use is modest beside industrial and bait demand, but small whole fish fry beautifully. Treat like whitebait: dry, flour, and fry. Support policies that leave enough sandeel in the water for wildlife when you have a choice of source.
