Steelhead is the anadromous form of rainbow trout (Oncorhynchus mykiss) that goes to sea and returns like a salmon—often sold beside true salmon for its pink-orange flesh, moderate oil, and delicate flavour. Wild steelhead is scarce and regulated; farmed steelhead (often marketed simply as trout) supplies most volume with consistent mild flesh. Cook like a refined salmon fillet: pan-sear skin-on, gentle roast, or light cure. Flesh is usually more delicate than sockeye and less fatty than farmed Atlantic salmon. Excellent with brown butter, almonds, and light herb sauces. Confirm whether the fish is wild steelhead or farmed rainbow sold under steelhead branding.
