Pink (humpback) salmon, Oncorhynchus gorbuscha, is the smallest and most abundant Pacific salmon, with pale pink flesh, low oil, and a delicate flavour. Much of the catch is canned or frozen for value products; fresh pink is seasonal and best treated gently because leanness shows every second of overcooking. Use for gentle poaching, moist baking, fish cakes, and good-quality canned salmon dishes. Fresh fillets benefit from sauce, butter, or en papillote steam. Do not expect the richness of chinook or sockeye—pink is everyday Pacific protein when handled with care.
