Sebastes is the huge genus of Pacific rockfishes—dozens of species sold as rockfish, Pacific snapper, or rock cod with firm-to-medium white flesh and mild flavour. Oil and colour vary by species and depth; most cook as versatile whitefish for frying, baking, and fish tacos. West Coast fisheries supply the bulk of genuine Sebastes product. Pan-sear, deep-fry, or bake with herbs. Identify species when possible for sustainability—some Sebastes are slow-growing and depleted. Fresh rockfish should be firm with a clean sea smell, never mushy.
