Pacific rockfish is the broad market label for West Coast Sebastes sold as fillets and whole fish—mild, slightly sweet white meat with a medium flake that takes batter, salsa, and miso equally well. It is the default “rockfish” of California, Oregon, and Washington menus and markets. Excellent for fish tacos, fish and chips, and weeknight pan fillets. Pacific rockfish is lean to moderate; a light crust protects moisture. Prefer named species or MSC lots when available over anonymous frozen blocks.
