Rubus idaeus is the European red raspberry species—and by extension the core of most commercial red raspberry breeding—producing hollow aggregate fruit that slip free of the receptacle when picked. Berries are fragile, aromatic, and sweet-tart, with golden and other colour sports existing within related cultivated complexes. Canes are biennial in fruiting habit for many floricane types; primocane cultivars fruit on first-year canes. Fresh eating, coulis, jam, and freezing are primary uses. When a recipe says raspberry without a cultivar, R. idaeus or its hybrid derivatives are intended. Handle dry and cold; wash only just before use. Pacific Northwest, Eastern Europe, and other cool regions lead quality production.
