Sugar pumpkins are small, dense-fleshed pie pumpkins—sweeter, less watery, and finer-grained than giant carving types. Typical weight is a few pounds; skin is deep orange and manageable to cut. This is the fresh pumpkin to buy when the goal is pie, soup, or puree rather than jack-o’-lanterns. Roast halves and scoop; or cube and roast for sides. Canned “pumpkin” is often other species, but fresh sugar pumpkins deliver true roasted aroma. Avoid using carving pumpkins as a substitute if you want rich puree.
