Shoulder cushion is the solid picnic muscle separated for neat roasting—leaner than butt, still flavourful, used for deli roast pork and Cuban-style mojo roasts when butterflied and marinated. Marinate with citrus and garlic, roast until sliceable, and carve thin. Cubes grill on skewers if not overcooked. Brine when the piece is very lean. A practical middle ground between fatty butt and dry pure loin.
