Ossabaw Island is a rare feral-heritage pig breed descended from Spanish stock released centuries ago on Ossabaw Island off the Georgia coast. Small, thrifty, and adapted to boom-and-bust forage, these pigs deposit exceptional intramuscular and subcutaneous fat; the meat is dark, intensely flavoured, and prized for charcuterie, confit, and slow roasting when finished carefully off-island. Closely related genetically to Iberian and other Mediterranean landrace pigs, Ossabaw Island swine are studied for metabolic thrift and conservation value. Purebred herds are few; meat is a specialty product of heritage farms that respect the breed’s tendency to fatten quickly on rich diets.
