Mangalitsa Red

Mangalitsa Red is the ginger to reddish-brown colour variety of the Hungarian curly-haired Mangalitsa, produced historically by crossing Blonde Mangalitsa with the Szalonta (Szalontai) breed. Like other Mangalitsa types it is a slow-growing lard pig with a dense woolly coat, strong outdoor constitution, and carcasses dominated by high-quality fat and fine marbling rather than extreme muscle yield. Red Mangalitsa pork is used for dry-cured hams, salami, smoked goods, and roasting joints where richness and soft fat texture are desired. The variety is less numerous than Blonde but is conserved in Hungary and specialty herds for the same gourmet and traditional charcuterie markets that revived the breed complex after near collapse.
