Gascon (Porc Gascon) is a black heritage pig of Gascony and the French Pyrenean foothills, one of France’s oldest rustic swine breeds. Slow-growing and outdoor hardy, it produces dark, marbled meat with firm, flavourful fat ideal for confit, rillettes, ventrèche, and regional charcuterie as well as roasting joints finished on pasture and local cereals. Closely tied to south-western French food culture, pure Gascon herds were rescued from near extinction and now supply Label Rouge and specialty markets. Compared with industrial lean pigs, Gascon emphasises taste, fat quality, and extensive rearing over rapid growth.
