Black Iberian (Cerdo Ibérico Negro) is the dark-coated Iberian pig of south-western Spain and Portugal, the classic genetic base of jamón ibérico and premium Iberian fresh pork. Adapted to dehesa oak woodland, pure black Iberians deposit abundant monounsaturated fat and fine marbling when finished on acorns (bellota) or mixed diets; the meat is dark, sweet, and intensely aromatic. Breed purity, extensive rearing, and finishing diet define Spanish Ibérico quality grades. Black Iberian purebreds and high-percentage crosses underpin DOP/IGP hams from Jabugo, Guijuelo, Extremadura, and related zones, as well as secreto, pluma, and presa cuts celebrated in Spanish grill cuisine.
