Basque (Pie Noir du Pays Basque / Euskal Txerria) is the black-and-white heritage pig of the Basque Country spanning south-western France and northern Spain. A hardy, slow-growing mountain breed, it yields richly flavoured, well-marbled pork celebrated in Basque cuisine—from axoa and grilled chops to traditional hams, sausages, and farmhouse charcuterie. Nearly extinct by the late twentieth century, the breed was revived by Basque farmers and conservationists. Extensive rearing in the Pyrenean foothills and strong culinary identity make Basque pork a regional specialty distinct from both industrial white pigs and south-western Iberian dehesa lines.
