Meats are mild-sweet with clean green character suited to both salted in-shell snacks and shelled ingredient packs. For decades it defined US orchard design alongside male pollinisers such as Peters. Modern plantings diversify, but Kerman remains the reference name in California trade. Expect consistent sizing and high open-shell percentages from well-managed orchards. Fresh kernels should be fragrant and green at the core; dull yellow meats are past peak. Ideal for large-scale roasting lines and everyday grocery pistachios. Sample before gelato paste— mild California character differs from intense Sicilian or some Iranian long types.
