Korean pine is the trade label for Pinus koraiensis kernels that dominate volume pine-nut markets. Triangular shape and milder flavour distinguish them from soft Mediterranean pinoli at a glance and on the tongue. Best lots are creamy after a light toast; weak lots are the cardboard-scented bags that give pine nuts a bad name. Price makes them the default for budget pesto and baking. Toast carefully, freeze surplus, and taste before a banquet. Excellent everyday utility when freshness is verified. Not the prestige choice for Ligurian pesto purists, but honest kitchen fuel when quality control is tight. Read origin and pack dates; “Korean pine” still dies in a warm warehouse.
